Ingredients

For the Eggs
  • 6 large large Eggs Fresh for best results
For the Filling
  • 1/2 cup Bang Bang Sauce Store-bought or homemade is fine
  • 1 teaspoon Kosher Salt Adjust to taste
  • 1 teaspoon Paprika Smoky paprika can enhance the flavor
  • 2 tablespoons Chives Chopped, can substitute with green onions
  • to taste Sriracha Drizzle for extra spiciness

Method

Preparation
  1. Hard boil the eggs: Place eggs in water and bring to a boil. Boil for about 9-12 minutes for a perfect hard-boiled yolk.
  2. Once boiled, cool them off: Submerge the eggs in cold water for a few minutes to stop the cooking process.
  3. Peel and halve the eggs: Carefully peel the eggs and slice them in half lengthwise.
Mixing
  1. Mix the yolks: In a bowl, scoop out the yolks and combine them with Bang Bang sauce, salt, paprika, and half of the chives. Mix until smooth and creamy.
Serving
  1. Stuff the eggs: Spoon or pipe the yolk mixture back into the egg whites neatly.
  2. Garnish and serve: Drizzle with Sriracha for that extra kick, and sprinkle with the remaining chives.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. Assemble and fill them a day in advance, just hold the Sriracha until serving. For easier peeling, try the ice bath method after boiling.
