Ingredients

Main Ingredients
  • 2 pieces boneless, skinless chicken breasts
  • 4 slices provolone cheese
  • 1 piece green bell pepper, sliced
  • 1 piece onion, sliced
  • 2 tablespoons olive oil for cooking
  • Salt and pepper to taste
  • 4 pieces hoagie rolls

Method

Cooking
  1. Heat the olive oil in a skillet over medium heat.
  2. Add the sliced chicken breasts, season with salt and pepper, and cook until fully cooked, about 6-8 minutes.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the sliced bell pepper and onion. Sauté until soft, about 4-5 minutes.
  5. Return the chicken to the skillet and mix with the vegetables.
  6. Place slices of provolone cheese on top and cover until melted.
  7. Serve the mixture in hoagie rolls.

Notes

For an added twist, marinate the chicken in BBQ sauce before cooking. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat on stovetop or in the microwave, and toast the rolls for extra crunch.
