Ingredients

Dry Ingredients
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
Wet Ingredients
  • 1/2 cup vegetable oil
  • 1/2 cup granulated white sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups shredded zucchini, patted dry
  • 3/4 cup mashed ripe bananas
Add-ins
  • 1 cup chocolate chips

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Spray a 5x9 loaf pan with non-stick spray and set it aside.
  2. In a medium mixing bowl, whisk together the cocoa, flour, baking soda, baking powder, salt, and cinnamon. Set aside.
Mixing Wet Ingredients
  1. In a large mixing bowl, mix together the oil, vanilla, and both sugars. Stir in the eggs, bananas, and shredded zucchini. Mix until everything is well combined.
Combining and Baking
  1. Fold in the dry ingredients until just combined, then fold in the chocolate chips.
  2. Pour the batter into the prepared loaf pan and bake in the preheated oven for 45 to 60 minutes, or until a toothpick comes out clean with a few moist crumbs sticking to it.
  3. Remove from the oven and let it cool completely. Slice and enjoy!

Notes

For a tender loaf, avoid overmixing when combining the wet and dry ingredients. Serve thick slices warm, and consider adding whipped cream or powdered sugar for extra flair.
