Ingredients

Wet Ingredients
  • 1 cup zucchini (finely shredded) Shred and drain excess moisture for fluffier bread.
  • 2 pieces eggs Can be substituted with flaxseed or chia eggs for a vegan version.
  • 1/2 cup vegetable oil Coconut oil can be used as a substitute.
  • 1/2 cup plain Greek yogurt Sour cream can be used for a tangy twist.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar Used in the batter.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for the swirl)
  • 1 tablespoon cinnamon (for the swirl)

Method

Preparation
  1. Preheat your oven to 350 degrees. Line a 9x5 loaf pan with parchment paper, securing it with binder clips.
  2. In a large bowl, combine the wet ingredients: zucchini, eggs, oil, yogurt, and vanilla. Mix until well combined.
  3. In a separate bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gradually sift the dry ingredients into the wet mixture. Stir just until everything is incorporated; do not overmix.
  5. In a small bowl, mix the cinnamon and sugar for the swirl.
Baking
  1. Pour half of the batter into your prepared pan. Sprinkle half of the cinnamon sugar on top.
  2. Spread the remaining batter over the top, then add the rest of the cinnamon sugar.
  3. Using a knife, swirl it up and down, side to side, to create a marbled effect.
  4. Bake for 60-65 minutes, until golden brown. Test it with a toothpick; it should come out clean.
Cooling
  1. Cool in the pan for 10-15 minutes. Then slice and serve.

Notes

Store leftovers in an airtight container at room temperature for 3-4 days. For longer storage, freeze for up to 3 months. Reheat slices in a toaster or microwave.
