Method
Preparation
- Start by cooking the cheese tortellini according to the package instructions. Drain and set aside.
- Season the steak on both sides with salt, black pepper, garlic powder, and smoked paprika.
Cooking
- In a large skillet, heat olive oil over medium-high heat. Add the seasoned steak and sear for about 3-4 minutes on each side, or until it reaches your desired doneness. Remove the steak from the skillet and let it rest.
- In the same skillet, lower the heat to medium. Add butter and minced garlic. Sauté until the garlic is fragrant, about 1 minute.
- Pour in the heavy cream and whole milk. Stir to combine, then bring to a simmer.
- Gradually add the parmesan cheese, mixing until fully melted and the sauce is creamy.
- Slice the rested steak thinly and return it to the skillet, along with the cooked tortellini. Toss everything together until well-coated in the sauce.
Serving
- Garnish with chopped parsley, red pepper flakes, and cracked black pepper if desired.
Notes
Use a good-quality steak for the best flavor and tenderness. Fresh tortellini will give you the best results in terms of taste and texture. If you prefer a lighter sauce, you can substitute some of the cream with additional milk. Adjust the amount of garlic and spices to fit your preference.
