Ingredients

For the marinade
  • 4 pieces Boneless Pork Chops Choose center loin or thin cuts for quick frying.
  • 2 cups Buttermilk Homemade buttermilk works too.
  • 1 teaspoon Salt Essential for seasoning.
  • 1 teaspoon Pepper Essential for seasoning.
For the dredging
  • 1 cup All-Purpose Flour Gluten-free flour can be used as a substitute.
  • 1 teaspoon Kosher Salt Enhances the flavor of the breading.
  • 1 teaspoon Black Pepper Feel free to use freshly cracked for more flavor.
  • 1 teaspoon Garlic Powder Substitute with fresh garlic for a bolder taste.
  • 1/2 teaspoon Cayenne Pepper Provides a kick of heat; can be omitted for milder flavor.
For frying
  • 2 cups Cooking Oil Vegetable, Peanut, or Safflower; select oils with high smoke points.

Method

Preparation
  1. Marinate the pork chops in buttermilk along with salt and pepper. Let them soak for at least 30 minutes.
  2. While the pork chops are marinating, mix flour, kosher salt, black pepper, garlic powder, and cayenne pepper in a shallow dish.
Cooking
  1. Heat oil in a large pan over medium-high heat until shimmering.
  2. Dredge each pork chop in the flour mixture until fully coated, shaking off any excess.
  3. Fry the pork chops in batches, cooking for about 5-6 minutes on each side until they're golden brown and cooked through.
  4. Transfer to a paper towel-lined plate to drain excess oil and keep them crispy.

Notes

For extra crunch, double-dredge the pork chops! A second layer of flour enhances crispiness.
