  • to taste fresh parsley for garnish

Method

Preparation
  1. Get your crockpot ready.
  2. In a large bowl, combine garlic, Parmesan cheese, Italian seasoning, salt, pepper, chicken broth, and olive oil. Mix well.
  3. Place the halved baby potatoes at the bottom of the crockpot.
  4. Layer the chicken breasts on top of the potatoes.
  5. Pour the garlic Parmesan mixture over the chicken and potatoes.
  6. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
  7. Garnish with fresh parsley before serving.

Notes

For a crispy finish, sear the chicken before adding it to the crockpot. You can also add vegetables like carrots or green beans for a fuller meal. Adjust seasoning according to your taste and try variations like cauliflower instead of potatoes for a low-carb option.
