Ingredients

Main Ingredients
  • 1 1/4 lbs Chicken breast (diced small)
  • 12 oz gluten-free farfalle Use according to package directions for al dente.
  • 2 cup chicken broth
  • 2 cups dairy free heavy cream
  • 2 cups chopped spinach
  • 8 oz dairy free parmesan (shredded)
Seasonings
  • 1 3/4 tsp sweet smoked paprika
  • 1 1/2 tsp oregano
  • 1 1/2 tsp garlic powder Also needed an extra tsp for the chicken.
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt Also needed an extra half tsp for the sauce.
  • 2 tbsp minced onion
  • 2 tsp Italian seasoning
  • 1 2/3 tbsp gluten free 1:1 flour
For Cooking
  • 4 tbsp dairy free butter
  • 2 tbsp pasta water (as needed) Reserve some from cooking pasta.

Method

Preparation
  1. In a large pot of water, cook the gluten-free farfalle according to package directions for al dente. Drain and set aside, saving a bit of pasta water for later.
  2. In a small bowl, toss the diced chicken with the sweet smoked paprika, oregano, garlic powder, thyme, black pepper, and salt until well coated.
Cooking
  1. Heat olive oil over medium heat in a large skillet. Sear the chicken for about 3 to 4 minutes on each side until cooked through and the internal temperature reaches 165°F. Transfer the chicken to a plate.
  2. In the same skillet, add the dairy-free butter and let it melt. Stir in all the sauce seasonings and simmer for about a minute.
  3. Add gluten-free flour, mixing well and scraping the skillet’s bottom. Gradually whisk in the chicken broth and dairy-free heavy cream.
  4. Stir in chopped spinach and simmer while whisking for 3 to 4 minutes until you have a rich, creamy sauce. Add the dairy-free parmesan and stir until melted. Cook until your sauce is at desired thickness.
  5. Toss in the cooked pasta and gently coat everything. If the sauce is too thick, add a tablespoon of the reserved pasta water as needed. Finally, mix in the seared chicken, and you’re ready to enjoy!

Notes

For serving, use wide, shallow bowls and top with fresh herbs and more dairy-free parmesan. Store in an airtight container in the fridge for 3 to 5 days, reheating in a skillet with a splash of extra cream or pasta water.
