Ingredients

Dough Ingredients
  • 1 cup gluten-free 1:1 flour like King Arthur’s
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup plain Greek yogurt
Topping Ingredients
  • 2 tablespoons Everything bagel seasoning
  • Olive oil spray For coating the bagels
  • Egg white or water For coating the bagels so the seasoning sticks

Method

Preparation of the Dough
  1. In a medium-sized bowl, combine the flour, baking powder, and salt to make the gluten-free self-rising flour. Then add the yogurt and mix well until a thick, slightly wet, chunky dough forms.
  2. Sprinkle some flour on your hands and on the dough. Mix and knead in the bowl until a smooth, dough ball forms. This takes about 1 minute or less.
  3. Turn the bagel dough onto a well-floured surface and knead it with your hands for another minute.
Shaping the Bagels
  1. Use a rounded tablespoon to scoop about 1 heaping tablespoon of the dough into your hands and roll it into a ball. Place it on a clean plate. Continue this until you have rolled all the dough.
Cooking
  1. Preheat the air fryer to 350 degrees F.
  2. While the air fryer is preheating, spray or lightly brush the bagel balls with olive oil spray. Add Everything bagel seasoning to a shallow bowl and roll each dough ball in the seasoning.
  3. Spray the air fryer basket with olive oil spray and place the bagels in the basket in a single layer, leaving some space between them.
  4. Cook the mini bagels for 10-12 minutes. Check one after 10 minutes; if doughy, cook for 1-2 more minutes.
  5. Remove the bagels from the air fryer and let them cool for 5 minutes.

Notes

Store leftovers in an airtight container at room temperature for 1-2 days, or refrigerate for up to a week. They freeze well; reheat in the air fryer or microwave.
