Ingredients

Main ingredients
  • 4 pieces thick pork loin chops (boneless or bone-in, about 1½ inches thick)
  • 1.5 cups prepared stuffing for pork chops
  • 0.5 cups shredded cheese (optional) recommended for added flavor
  • 2 tablespoons butter, melted
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 0.5 cups chicken broth

Method

Preparation
  1. Preheat the oven to 375°F.
  2. Pat the pork chops dry and carefully cut a pocket into the side of each chop.
  3. Prepare the stuffing according to package instructions or your favorite recipe. If feeling cheesy, gently fold the cheese into the stuffing.
  4. Spoon the stuffing into each pocket, pressing gently.
  5. Season the outside of the pork chops with salt, pepper, garlic powder, and thyme.
Cooking
  1. Heat olive oil in an oven-safe skillet over medium heat. Sear the stuffed pork chops for two minutes per side until lightly golden.
  2. Pour chicken broth into the skillet and drizzle butter over the chops. Transfer to the oven.
  3. Bake until the internal temperature reaches 145°F. Let rest before serving.

Notes

To store, place leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Reheat in the oven for best texture.
