Ingredients

For the Marinade
  • 2 cloves garlic, minced
  • 1 tablespoon adobo seasoning
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar
  • to taste pinch salt
Main Ingredients
  • 4 pieces bone-in pork chops
  • 1 piece lime or lemon wedges (for serving)
  • 4 pieces tostones (fried green plantains)

Method

Preparation
  1. In a bowl, combine minced garlic, adobo seasoning, black pepper, olive oil, vinegar, and salt to create a marinade.
  2. Rub the marinade all over the pork chops and let sit for at least 30 minutes (or overnight in the fridge for better flavor).
Cooking
  1. Heat a skillet over medium-high heat and add a bit of oil.
  2. Place the marinated pork chops in the skillet and cook for about 5-7 minutes on each side, or until they are browned and cooked through.
  3. Serve hot with lime or lemon wedges and the tostones on the side.

Notes

For an even better flavor, consider marinating the pork overnight. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat in a skillet for that crispy texture.
