  • 1 tsp Cumin Ground cumin
  • 1 tsp Paprika Smoked or sweet paprika
  • 1 tsp Salt Adjust to taste
  • 1/2 tsp Pepper Freshly ground black pepper
For Assembly
  • 8 pieces Taco shells Crunchy or soft, as preferred
  • 1 cup Tomatoes (chopped) Use fresh diced tomatoes
  • 1 medium Red onion (sliced) Thinly sliced
  • 1 cup Cucumber (diced) Fresh cucumber
  • 1/2 cup Feta cheese (crumbled) Optional, can be omitted
  • 2 cups Kale or lettuce (shredded) For extra crunch and nutrition
  • 1/2 cup Hummus or tzatziki For drizzling on top

Method

Preparation
  1. In a bowl, combine olive oil, minced garlic, cumin, paprika, salt, and pepper. Marinate the chicken in the mixture for at least 30 minutes.
  2. Grill or sauté the chicken until cooked through. Let it rest for a few minutes, then slice.
  3. Prepare the taco shells by heating them as needed.
Assembly
  1. Fill each taco shell with sliced chicken and top with chopped tomatoes, sliced red onion, diced cucumber, crumbled feta cheese, and shredded kale or lettuce.
  2. Drizzle with hummus or tzatziki before serving.

Notes

Marinate the chicken longer for enhanced flavor. Substitute feta for goat cheese or omit for a dairy-free version. Toast taco shells for extra crunch, and add any leftover veggies for variety.
