Ingredients

Main Ingredients
  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • to taste Salt and pepper
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Method

Preparation
  1. Sprinkle garlic powder, onion powder, smoked paprika, salt, and pepper all over the chicken. Get in there and really coat it!
  2. Heat a skillet over medium heat, and sear the chicken for 3–4 minutes on each side until it’s golden brown. Remove from the pan and set aside.
  3. In a bowl, mix together BBQ sauce, honey, and optionally a splash of soy sauce.
Cooking
  1. In the same pan, toss in the uncooked rice and toast it for 1–2 minutes.
  2. Add the chicken broth and half of your honey BBQ sauce mixture to the rice. Stir it all together.
  3. Put the chicken back in the pan and pour the remaining sauce on top.
  4. Cover and simmer on low heat for about 15 minutes.
  5. Stir in mixed vegetables, cover, and cook for an additional 5 minutes or until the rice is tender and the chicken is cooked through.
  6. Let it sit for 5 minutes before serving. Garnish with chopped green onions.

Notes

Timing is everything: Let the chicken rest after cooking; it locks in those juices! Feel free to switch out chicken thighs for chicken breasts or shrimp for a fun twist. If you like a bit of crunch, add some chopped nuts or seeds before serving.
