Ingredients

For the Chicken
  • 1.5 lbs boneless skinless chicken thighs, pounded to an even thickness
  • 1 tbsp olive oil for grilling
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.33 cup honey
  • 2 tbsp chipotle peppers in adobo, finely chopped
  • 0.25 cup ketchup
For the Sliders
  • 6 whole soft brioche slider buns
  • 2 tbsp unsalted butter for toasting buns
For the Slaw
  • 1 cup shredded green cabbage
  • 0.5 cup purple cabbage, thinly sliced
  • 0.5 cup shredded carrots
  • 0.25 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • 0.25 cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp milk
  • 2 cloves garlic, minced

Method

Marinate the Chicken
  1. In a bowl, mix honey, chipotle peppers, ketchup, salt, and pepper. Add the chicken thighs and coat well. Let it marinate for at least 30 minutes.
Cook the Chicken
  1. Heat olive oil in a pan over medium-high heat. Cook the chicken for about 6-7 minutes on each side until cooked through. Let it rest and then slice.
Toast the Buns
  1. Melt butter in the same pan and toast the brioche buns until golden brown.
Make the Slaw
  1. In a bowl, combine green cabbage, purple cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, sour cream, milk, and minced garlic. Mix until well combined.
Assemble the Sliders
  1. Layer sliced chicken on the bottom half of the buns, top with slaw, and then place the top half of the bun over.

Notes

Use chicken breasts if you prefer. Add more chipotle for extra heat. You can also swap veggies in the slaw for personal preference.
