Ingredients

Main Ingredients
  • 4 pieces boneless chicken thighs (skin on, about 1–1.2 lb / 500 g)
  • 1.5 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp garlic powder
  • 0.25 tsp salt
  • Black pepper to taste
  • 0.25 cup cornstarch (for coating)
  • 0.25 cup oil (for pan frying)
  • 2 tbsp butter
  • 1 bulb garlic (finely minced)
  • 1 tbsp soy sauce (for sauce)
  • 1 tbsp honey
  • Dried parsley for garnish (optional)

Method

Preparation
  1. Debone the chicken thighs if needed—keeping the skin on for that delicious crispy factor.
  2. Wash and pat them dry with paper towels.
  3. Optional: Lightly score the meat side a few times and gently pound with the back of a knife for even cooking.
  4. In a bowl, combine soy sauce, oyster sauce, garlic powder, salt, and black pepper. Marinate the chicken thighs for at least 15 minutes.
  5. Lightly coat each chicken thigh with cornstarch, shaking off the excess.
Cooking
  1. In a large pan over low-medium heat, add the oil and place the chicken skin side down. Pan fry for about 4–5 minutes on each side until golden brown and crispy.
  2. Ensure the internal temperature reaches at least 165°F (74°C).
  3. Remove the chicken and set aside. Pour out the excess oil.
  4. Melt the butter over low heat, then add the minced garlic and cook until fragrant.
  5. Stir in the honey and soy sauce, and simmer until slightly thickened.
  6. Return the chicken to the pan, coating both sides in the sauce. Garnish with dried parsley if desired.

Notes

For extra crispiness, ensure the chicken skin is dry before frying. You can substitute chicken thighs with drumsticks or wings, and use fresh garlic for a bolder flavor.
