Ingredients

Main ingredients

  • 1 cup shredded sharp cheddar cheese For a spicy variation, use pepper jack cheese.
  • 2 large eggs Can be substituted with a flaxseed mixture for a vegan option.
  • 1/2 cup all-purpose flour To help bind the mixture.
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil or cooking spray for frying or baking For frying or greasing the baking surface.

  2. In a large bowl, combine warm mashed potatoes with cheddar cheese, eggs, flour, salt, and pepper until blended.
  3. Use a spoon to scoop mixture into golf ball-sized portions.
Cooking
  1. Preheat oven to 375°F (190°C) or heat oil in a deep fryer.
  2. Bake for 20-25 minutes or fry until golden brown and crispy.
Serving
  1. Let cool slightly before serving. Enjoy with a side of tangy dipping sauce or as a side to your favorite main dish.

Notes

Leftovers can be stored in the fridge for about 3-4 days. For longer storage, freeze for about 2 months. Reheat in the oven to maintain texture.
