Ingredients

Main Ingredients
  • 1.33 cups mashed bananas Use overripe bananas for better sweetness.
  • 2 large eggs Make sure they are at room temperature.
  • 0.5 cup unsalted butter Should be softened.
  • 0.5 cup vegetable oil Can substitute half with applesauce for a lighter version.
  • 2 cups all-purpose flour Can replace some with whole wheat flour for health benefits.
  • 0.5 cup brown sugar
  • 0.25 cup granulated sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Method

Preparation
  1. Preheat your oven to 350°F and prepare an 8×4-inch loaf pan by greasing, flouring, or lining with parchment paper.
  2. Transform ripe bananas into a smooth mash — make sure you have 1 ⅓ cups of creamy goodness.
  3. In a separate bowl, combine flour, baking soda, salt, and cinnamon to create a uniform dry mixture.
  4. Using a hand mixer, whip butter and both sugars until light and airy, about 2 minutes.
  5. Incorporate eggs individually, blending thoroughly after each addition. Then mix in vanilla and mashed bananas until everything is harmonious.
  6. Gently fold the dry ingredients into the wet mixture, stirring minimally to maintain a tender texture.
  7. Transfer the batter to the prepared pan, spreading it evenly for consistent baking.
  8. Bake for 45-60 minutes, monitoring it until a toothpick comes out clean when inserted into the center.
  9. Allow the bread to rest in the pan for 5 minutes for stabilization.
  10. Carefully transfer to a wire rack and let it cool completely before slicing to preserve moisture and prevent crumbling.

Notes

For extra richness, slice thick and slather with butter. Add a dollop of Greek yogurt or a sprinkle of cinnamon sugar for extra flair. Cool completely before slicing to maintain moisture.
