Ingredients

Main Ingredients
  • 4 pieces pork chops Bone-in or boneless.
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 teaspoons paprika
  • ½ teaspoon mustard powder
  • ½ teaspoon garlic powder
  • 2 Tablespoons neutral oil
  • 1 Tablespoon butter Optional.

Method

Preparation
  1. Stir together the salt, pepper, and spices. Then, rub that mixture all over the pork chops, including the edges.
Cooking
  1. In a cast iron pan over medium heat, warm the oil until shimmery. Add the butter if using, and then the pork chops.
  2. Cook the pork chops for 4-5 minutes until golden brown and they release easily from the pan. If they’re sticking, give them more time!
  3. Lift the pork chops and cook the fatty edge in the oil for about 3 minutes until golden.
  4. Flip the pork chops to the uncooked side and let them cook until golden brown, reaching an internal temperature of 140°F. This will take another 4-5 minutes.
  5. Remove the chops to a plate and let them rest for five minutes before serving.

Notes

Let the pork chops sit out for about 30 minutes before cooking for more even cooking. Using a cast iron skillet helps achieve the perfect sear. Use a meat thermometer for accuracy to ensure juiciness. Adding butter enhances the flavor.
