Ingredients

Main Ingredients
  • 4 - bone-in or boneless pork chops (about 2 lbs) Bone-in pork chops can give more flavor, but boneless is easier to manage.
  • 6 medium potatoes (peeled and sliced into rounds) Opt for starchy potatoes like Russets for creamy texture.
  • 1 medium onion (thinly sliced)
  • 2 cloves garlic (minced) Toasting the garlic is recommended for better flavor.
  • 1.5 cups chicken broth
  • 1 cup cream of mushroom soup (or cream of chicken soup) Cream of chicken soup is a great substitute.
  • 0.5 cup milk
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 1 tsp dried thyme (or Italian seasoning)
  • 2 tbsp butter (cut into small cubes)
  • 2 tbsp fresh parsley (chopped for garnish)

  1. Lightly grease the slow cooker insert with cooking spray or butter.
  2. Place the sliced potatoes evenly in the bottom of the slow cooker.
  3. Scatter onion slices and minced garlic over the top of the potatoes.
  4. Sprinkle potatoes with salt, pepper, paprika, and thyme.
  5. Lay the pork chops over the potato layer.
  6. In a bowl, whisk together chicken broth, cream soup, and milk. Pour evenly over the pork chops and potatoes.
  7. Dot the mixture with butter cubes on top.
Cooking
  1. Cook on low heat for 6-7 hours or on high heat for 3-4 hours, until pork chops are tender and potatoes are cooked through.
