Ingredients

For the Salmon
  • 4 pieces 6-ounce pieces of salmon approx. 170 grams each; longer pieces work best
  • 2 Tbsp olive oil divided
For the Filling
  • 3 cups baby spinach packed
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika regular or smoked
  • 1 pinch cayenne pepper
  • 1 approx. 5.3-ounce block of feta cheese approx. 150 grams
  • 1/4 cup parmesan freshly grated; go for parmigiano-reggiano for maximum taste
  • 1/4 cup jarred roasted red peppers chopped into small, 1/4-inch pieces
  • Salt + pepper to taste

Method

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the salmon pieces onto the lined baking sheet, skin-side down.
  3. Using a sharp knife, slice down the middle of each salmon piece, lengthwise—don’t cut all the way through.
  4. Brush the salmon with 1 Tbsp of olive oil and sprinkle with salt and pepper. Set aside.
Cooking
  1. Heat the remaining 1 Tbsp of olive oil in a large pan over medium heat.
  2. Add the spinach, Italian seasoning, paprika, cayenne, and a sprinkle of salt and pepper. Sauté until the spinach wilts, about 2 minutes.
  3. Turn off the heat and mix in the chopped roasted red peppers, feta cheese, and parmesan. Stir it all together, mashing the feta a bit so everything sticks.
Stuffing and Baking
  1. Spoon the spinach-feta mixture into the cut part of each salmon piece, filling them as much as you can.
  2. Bake the salmon for 12-17 minutes, depending on thickness and how well done you like it. Remove from the oven and serve hot.

Notes

Store leftovers in the fridge for up to 3 days in an airtight container. To reheat, bake at 350°F (175°C) for about 10 minutes.
