Preparation
- Preheat your oven to 400°F (200°C).
- Toss the cubed sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, and a pinch of salt and pepper. Spread them on a rimmed baking sheet.
- Roast until edges caramelize and centers are tender, about 40–45 minutes, flipping once halfway through.
Cooking the Beef
- While the potatoes roast, warm the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
- Sauté the chopped onion until soft and translucent, about 5–7 minutes.
- Add the ground beef, breaking it into small pieces as it cooks.
- Sprinkle in the taco seasoning and a splash of water if needed; simmer until the beef is well-browned.
- Taste and adjust salt and pepper.
Assembly
- Divide the roasted sweet potatoes and seasoned beef between bowls.
- Add sliced avocado and spoonfuls of cottage cheese alongside the warm components.
- Drizzle each bowl with hot honey to taste and garnish with optional toppings like cilantro, lime, or red pepper flakes.
Notes
This meal can be customized easily. Use quinoa or brown rice instead of sweet potatoes for a different twist. Leftovers last in the fridge for about 4 days and can be frozen for up to 3 months, just reheat thoroughly before serving.
