Ingredients

Main Ingredients
  • 2 slices bacon Cut into bite-sized pieces
  • 1 lb small golden potatoes Diced into medium bite-sized pieces
  • 2 tablespoons olive or avocado oil For cooking
  • to taste salt
  • to taste pepper
  • to taste Old Bay seasoning
  • 1-2 cloves garlic Minced
  • 1 tablespoon pure maple syrup
  • as needed fresh parsley or chives For garnish (optional)

Method

Preparation
  1. Cut the bacon slices into bite-sized pieces and set aside. It's best if the bacon is chilled in the freezer for at least thirty minutes.
  2. Dice the potatoes into medium bite-sized pieces and place them in a bowl filled with cold water to keep them from browning.
  3. Drain and dry the potatoes thoroughly.
Cooking
  1. Heat two counts of olive or avocado oil in a 10-12" skillet over medium-high heat.
  2. Once the oil is hot, add the potatoes. Season with salt, pepper, and Old Bay seasoning. Start with a few sprinkles of each.
  3. Cook the potatoes for 10 minutes, stirring often, until they’re brown. If needed, add a little more oil.
  4. Add the bacon to the skillet with the potatoes. Toss everything together and cook for 4-5 minutes until the bacon is crispy and the fat renders.
  5. Reduce the heat to medium-low, add the minced garlic, and toss well. Cook for less than two minutes until the garlic is fragrant and tender.
  6. Drizzle the maple syrup over the mixture and toss again. Let it cook for another minute, watching carefully to avoid burning.

Notes

These breakfast potatoes are best served hot right out of the skillet. Adjust seasoning to taste and feel free to customize with additional vegetables or spices.
