Ingredients

Fritter Batter
  • 1.5 cups gluten-free flour blend (210 g)
  • 0.75 teaspoon xanthan gum only add if your GF flour blend doesn’t already contain xanthan
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 2 tablespoons light brown sugar (28 g)
  • 2/3 cup milk, dairy or non-dairy (160 ml)
  • 1 tablespoon oil (15 ml)
  • 2 eggs or 6 tablespoons aquafaba (90 ml)
  • 2 teaspoons vanilla extract
  • 2 medium apples, peeled and finely diced
Icing
  • 3 cups powdered/icing sugar (375 g)
  • 3 tablespoons milk, dairy or non-dairy (45 ml)
  • 0.5 teaspoon vanilla extract

Method

Preparation
  1. In a large mixing bowl, whisk together the gluten-free flour, xanthan gum (if needed), baking powder, salt, cinnamon, nutmeg, and brown sugar.
  2. Stir in the milk, oil, eggs (or aquafaba), and vanilla extract. Mix until you have a thick and smooth batter with no lumps.
  3. Gently fold in the diced apples.
Cooking
  1. In a large skillet or pot, heat the frying oil to a depth of about 1 1/2 – 2 inches. Turn the heat to medium-high and wait until the oil reaches 360-375°F (80-90°C).
  2. Once the oil is hot, scoop out 1-2 tablespoons of batter and carefully drop it into the oil, leaving space between each fritter (about 3-4 fritters at a time).
  3. Cook each fritter for about 3 minutes on one side, then flip and fry for another 2-3 minutes until golden brown.
  4. Remove the fritters from the oil and let them cool on a wire rack.
  5. To make the icing, combine the powdered sugar, milk, and vanilla in a small bowl until a thick glaze forms.
  6. Once the fritters have cooled slightly, dip them in the glaze and set them back on the cooling rack to let the excess drip off.

Notes

Serve the Gluten-Free Apple Fritters warm for the best taste. You can enjoy them plain or with a drizzle of glaze on top. They are great for breakfast, as an afternoon snack, or for dessert.
To store any leftover fritters, place them in an airtight container. Keep them in the refrigerator for up to 3 days. To reheat, simply warm them in the microwave for a few seconds or bake them in the oven at a low temperature until they are warm again.
