Preparation
- In a large mixing bowl, whisk together the gluten-free flour, xanthan gum, baking powder, salt, cinnamon, nutmeg, and brown sugar.
- Stir in the milk, oil, eggs (or aquafaba), and vanilla extract. Mix until you have a thick and smooth batter without lumps.
- Fold in the diced apples gently.
Frying
- Heat oil in a large skillet or pot to 360-375°F (80-90°C), ensuring the oil is about 1 1/2 – 2 inches deep.
- Once the oil is hot, scoop out 1-2 tablespoons of batter and drop it carefully into the oil. Leave space between each fritter as you cook.
- Fry each fritter for about 3 minutes on one side, then flip and cook for another 2-3 minutes. Repeat until all batter is used.
- Remove fritters from the oil and let cool on a wire rack.
Icing
- To make the icing, whisk the powdered sugar, milk, and vanilla extract in a small bowl until it forms a thick glaze.
- Dip each fritter into the glaze and let the excess drip off.
Notes
Enjoy these fritters warm and fresh. Store leftovers in an airtight container at room temperature for up to two days or refrigerate for up to a week. To reheat, use a toaster oven or microwave.
