Method
Preparation
- In a bowl, add the almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix everything together until it’s well combined.
- Stir in the chocolate chips.
- Place parchment paper on a cutting board or a large plate. Transfer the cookie dough onto the parchment paper. Use a silicone spatula or clean hands to firmly press the cookie dough flat, about 1/2-inch thick. Set it aside.
Chocolate Layer
- In a small bowl, add the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted.
- Pour and spread the melted chocolate over the cookie dough. If you want, sprinkle a bit of flaky sea salt on top.
Chill and Serve
- Chill the cookie dough bark in the freezer for 10 minutes to set.
- Once set, chop it into large chunks. Enjoy!
Notes
Store in an airtight container in the fridge for up to a week, or freeze for up to three months separated with parchment paper.
