Ingredients

For the pork
  • 2 pounds pork tenderloin, trimmed
  • 1 tablespoon olive oil For greasing the crockpot
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
For the sauce
  • 1 cup low-sodium chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons cornstarch (optional) For thickening the sauce
  • 2 tablespoons water (optional) For cornstarch slurry

Method

Preparation
  1. In a small bowl, mix garlic powder, onion powder, thyme, salt, black pepper, and paprika.
  2. Rub this spice mix all over the pork tenderloin.
  3. Pour olive oil into the bottom of your crockpot. Place the spiced pork inside.
  4. In a separate bowl, mix chicken broth, soy sauce, and Worcestershire sauce. Pour this mixture around the pork.
Cooking
  1. Cover and cook on LOW for 6 to 7 hours or HIGH for 3.5 to 4 hours. Note: Do not open the lid during cooking.
  2. Check the internal temperature of the pork; it should reach 145°F. Remove the pork and let it rest for 5–10 minutes before slicing.
Sauce Preparation
  1. Optional: To make the sauce, pour the cooking liquid into a saucepan. Mix cornstarch and water to form a slurry. Stir this into the simmering liquid and cook until slightly thickened.
Serving
  1. Finally, slice the pork into medallions and serve with the sauce if desired.

Notes

Store leftovers in the fridge for up to 3-4 days in an airtight container. For longer storage, freeze for about 3 months. Gently warm in the microwave or on the stove with chicken broth to keep it moist.
